Keep Calm And Have A Cupcake

Hey Everyone!

It’s Cierra and today I’ve decided that we have earned a cupcake. We made it past Wednesday, now we’re on that weird day standing between you and your weekend and you have done so well. You got out of bed today, if you really overachieved and got dressed you earned extra sprinkles, so go you! And to help with the possible guilt of having a cupcake, I’m sharing with you a recipe for Chocolate Cupcakes, so you have to work for your reward. So without further ado:

Cupcakes:

  • 1 1/2 Cups AP Flour
  • 1 1/4 Cups Sugar
  • 1/2 Cup Unsweetened Cocoa
  • 1 1/4 tsp Baking Soda
  • 1 tsp Salt
  • 1 Cup Buttermilk
  • 2/3 Cup Oil
  • 1 tsp Vanilla Extract
  • 2 Eggs

Heat oven to 350 Degrees F. Line 2 (12 cup) Muffin tins with cupcake liners. Set aside. In large bowl, blend all ingredients until moistened. Divide batter evenly among cupcake liners. Bake at 350 Degrees F. for 20 to 25 minutes.

Frost as desired and enjoy!!!
